Ingredients
- 2 eggs
- Cheese (I prefer slices)
- Shredded kale
- Quinoa (quick cook is fine also)
- Peppers (optional)
- Chives (optional)
- Cook the quinoa according to the directions on the package. Set aside
- Scramble the eggs in a bowl. Add the cheese, kale, chives, and peppers. Also preferred seasoning and mix well
- Cook scramble egg mixture in a pan
- Add the scramble egg mixture to the quinoa and mix well
