Scrambled Eggs with Cheese, Kale, and Quinoa


  • 2 eggs
  • Cheese (I prefer slices)
  • Shredded kale
  • Quinoa (quick cook is fine also)
  • Peppers (optional)
  • Chives (optional)
  1. Cook the quinoa according to the directions on the package. Set aside
  2. Scramble the eggs in a bowl. Add the cheese, kale, chives, and peppers. Also preferred seasoning and mix well
  3. Cook scramble egg mixture in a pan
  4. Add the scramble egg mixture to the quinoa and mix well
