Cucumber Egg Roll

Another tasty looking meal I found on YouTube!

Cucumber Egg Roll


  • 1 cucumber
  • Olive oil
  • Salt (seasoning of choice)
  • 4 eggs
  • Cheese


  1. Shred the cucumber and place in a bowl
  2. Add olive oil to the pan
  3. Saute shredded cucumbers in the pan until they begin to get browned. Make sure to squeeze the water out of the cucumber shreds before sauteeing. Add salt/seasoning to the cucumbers. Remove pan from heat and save for later
  4. Crack eggs into a bowl and beat well
  5. Add sauteed cucumbers to the eggs. Mix well
  6. Add olive oil to the pan
  7. Add cucumber egg mixture to the pan. Cook on one side until eggs begin to get done. Flip the eggs over (use a plate if necessary). Cook on the other side until eggs are done
  8. While the mixture is still warm, place egg mixture on parchment paper. Place cheese on top of the mixture
  9. Roll the mixture carefully without getting the paper stuck inside the roll. Twist at both ends and let the roll cool while the cheese melts
  10. Once cheese has melted and it’s cool enough to cut, slice and enjoy!
