Cucumber Egg Roll
Ingredients
- 1 cucumber
- Olive oil
- Salt (seasoning of choice)
- 4 eggs
- Cheese
Directions
- Shred the cucumber and place in a bowl
- Add olive oil to the pan
- Saute shredded cucumbers in the pan until they begin to get browned. Make sure to squeeze the water out of the cucumber shreds before sauteeing. Add salt/seasoning to the cucumbers. Remove pan from heat and save for later
- Crack eggs into a bowl and beat well
- Add sauteed cucumbers to the eggs. Mix well
- Add olive oil to the pan
- Add cucumber egg mixture to the pan. Cook on one side until eggs begin to get done. Flip the eggs over (use a plate if necessary). Cook on the other side until eggs are done
- While the mixture is still warm, place egg mixture on parchment paper. Place cheese on top of the mixture
- Roll the mixture carefully without getting the paper stuck inside the roll. Twist at both ends and let the roll cool while the cheese melts
- Once cheese has melted and it’s cool enough to cut, slice and enjoy!
